Northern White Tea
Northern White Tea is produced in Fuding, Fujian Province, and is made from the Fuding Dabai tea variety (also known as Fuding Baihao). The tea features an elegant appearance, with robust buds covered in thick, glossy fuzz. The liquor is clear and pale apricot-yellow, with a delicate aroma and mellow flavor. The Fuding Dabai tea plant is originally from Tailao Mountain in Fuding, which has a long history of tea cultivation. Some analysts suggest that the “white tea mountain located three hundred li east of Yongjia County” mentioned in Lu Yu’s Classic of Tea refers to Tailao Mountain in Fuding. The Qing Dynasty scholar Zhou Lianggong, in his work Min Xia Ji (Records of Fujian), mentioned that Tailao Mountain was once known for an ancient famous tea called “Lüxue Ya” (“Green Snow Sprout”), which “is now called Baihao.” By this reasoning, both the Fuding Dabai tea variety and the Baihao Yinzhen (White Hair Silver Needle) tea made from its buds have a very long history indeed.
