Golden Lake Whitebait

　　Golden Lake Whitebait is a specialty of Taining County, Sanming City, Fujian Province. The whitebait has delicious, tender flesh that is as white as jade and crystal clear. "Fried Eggs with Whitebait" is a distinctive local delicacy in Taining.

　　Whitebait is a high-value freshwater lake fish. In April 1986, 160,000 fertilized eggs of whitebait were transplanted from Taihu Lake and released into Dajin Lake for farming. In subsequent years, more eggs were continuously introduced from Taihu Lake. After five years of transplantation and release, the effort proved successful. It became the first successful project of its kind in China’s valley-type reservoirs, filled a gap in Fujian Province, and marked the end of the history of no whitebait in Fujian’s freshwater bodies.
