White Hair Monkey
White Hair Monkey is a historic famous tea, categorized as green tea. It was first created in the early years of the Republic of China. Also known as "Bailv" or white-green tea, it is a semi-fermented tea originally produced in Zhenghe County, Fujian Province. Locally, it is also called "Baihou" (white monkey), and earned its name due to its resemblance to a furry monkey. Its appearance features thick, curly strips covered with white down, resembling a monkey crouching quietly. The inner quality boasts fresh, pure, and brisk fuzz aroma, with a mellow, slightly sweet taste, and clear yellowish-green liquor. The leaves are tender green, intact, even, and free from impurities. Its quality characteristics include a plump, curly shape, prominent white fuzz, orange-yellow liquor, and a clear, fragrant taste.

In 1910, local tea merchant Fan Changyi created White Hair Monkey Tea, which became popular in Guangdong as well as Hong Kong and Macau. The production method of White Hair Monkey lies between that of black and green tea, with an emphasis on preserving fuzz and shaping during processing.
