Nanping Shiitake Mushrooms

Shiitake mushrooms, also known as fragrant mushrooms or aromatic fungi, are a delicacy among edible mushrooms with a history of over 1,000 years of artificial cultivation. Both the "Lüshi Chunqiu" and "Compendium of Materia Medica" discuss the culinary and medicinal value of shiitake mushrooms. Farmers in the Wuyi Mountain area have a tradition of cultivating shiitake mushrooms, among which those grown on oak logs are of the highest quality. When purchasing shiitake mushrooms, first choose by category — flower mushrooms are the best, thick mushrooms come next, and thin mushrooms are third; second, examine the shape — those with neat form, round copper-rimmed (curled) edges and thick flesh are superior; flower mushrooms refer to those with distinct patterns on the cap; third, check the color — a normal hue is yellowish-brown; fourth, look for signs of mold, blackening, and ensure the aroma is normal; fifth, grade by cap size — those with a diameter of over 6 cm are Grade 1, 4–6 cm are Grade 2, 2.5–4 cm are Grade 3, and so on.
