Dried Carp
Dried carp is a specialty snack from Nanping, Fujian. The dried Wutun highland paddy field carp from Wuyishan City, commonly known as “Field Carp Dried,” is a famous local product of the northern mountainous region of Wuyishan. Historical records suggest that its production originated in the early Northern Song Dynasty and has a long history spanning over a thousand years. It is made using carp that are raised in pollution-free, cold-water paddy fields at elevations above 500 meters for two years and fed exclusively on rice flowers. The process, from fish breeding to the final product, involves over a hundred secret traditional procedures. The finished product features tender meat, crispy bones, sweet and delicious taste, rich flavor, and nutritional health benefits.
