Wufu Snail
When visiting Mount Wuyi, you’re sure to learn about one person—the Southern Song Dynasty Neo-Confucian scholar Zhu Xi. To delve deeper into his legacy, a must-visit spot is Wufu Town in Mount Wuyi. In this quaint village, there’s one local snack you absolutely must try: Wufu snails.
The snails from Wufu in Mount Wuyi are known for their large shells, plump meat, and rich juice, with a spicy flavor as the highlight. Use a toothpick to pick out the front part of the snail meat and put it in your mouth—the meat is tender, the taste rich and fragrant, and the texture delightfully chewy. Pairing it with Wuyi Liuxiang tea is the perfect choice. This delicacy can be found both in downtown Wuyishan and the resort area.
How to Make Wufu Snails:
After washing the snails, boil them in a pot, then stir-fry with common seasonings such as scallions, ginger, garlic, and chili sauce. Usually, people from northern China may notice one or two dried leaves in the dish and wonder what they are. In fact, these are a unique Southern Chinese seasoning called bay leaves, which enhance the aroma of the dish. They are one of the essential seasonings for stir-fried snails.
This dish can be enjoyed at various restaurants and farmhouse eateries in both the urban area and the resort area.
