Congyang Big Radish

Congyang Big Radish is a specialty of Congyang County, Anqing City, Anhui Province. The best Congyang radishes come from Qiji Tou and Huangnigang, as they grow in semi-sandy yellow soil with a balanced pH level and are nourished entirely by base fertilizer. As a result, they are pure, natural green food, making them the flagship and representative variety of Congyang radishes.

As a common household vegetable, there are many ways to prepare Congyang radishes. The most common cooking method is braised pork with radish, followed by wild duck stewed with radish and salted radish. In winter and spring, people often boil radishes together with half-cooked pork slices. The radishes used are top-quality, cut into chunks, while the pork should be half lean and half fat. When the dish is finished and ready to serve, adding some chopped scallion leaves enhances the color, aroma, and flavor, making it a truly excellent pairing with alcohol or rice. When dining, reheating the braised pork with radish over a low charcoal fire fills the air with a rich fragrance and leaves a long-lasting aftertaste. Salted radish is a staple dish for rural households, not only showcasing the diverse ways to enjoy radishes but also serving as a method to extend their shelf life. After washing and drying the radishes, they are placed in an enameled jar, evenly coated with fine salt, then pressed tightly and sealed. They are ready to eat after about two weeks. Salted radish is crispy and tasty, offering a balance of salty, sweet, spicy, and tangy flavors, making it suitable both as a side dish or a standalone snack. In recent years, as living standards have improved, people have continued to innovate in how they prepare radishes. For example, at banquets, there is a dish called “Silver Threads,” which is actually “cold tossed radish strips.” It involves cutting premium, fresh white radishes into fine strips, briefly blanching them in warm water, then marinating them in sugar and salt for about half an hour before serving. This dish is simple to make, uses inexpensive ingredients, and has a delicious taste that is sweet with a hint of salt, salty with a touch of spice—both fragrant and crunchy, making it hard to put down. Wild duck stewed with radish, where wild duck and radish are gently simmered together, is considered the most premium way to enjoy Congyang radishes, combining home-style cooking with a refined twist.
