Red-coated Crabs in Brine
The swimming crab, also known as the white crab, is found in coastal waters. Its cephalothorax has protruding ends, resembling a spindle, and its two large claws are long and slender. The shell features a purple cloud pattern. The meat is tender, snow-white, and the roe is smooth and rich, packed with protein, fat, and various minerals. It can be steamed, stir-fried, or cut into small pieces and preserved in salt and soy sauce to make delicious "crab paste," an excellent gift for family and friends. Swimming crabs caught around the Winter Solstice have plump meat and bright red roe. When the whole crab is briefly soaked in saltwater, it becomes the famous Red-coated Crab in Brine—delicious and appetizing, making it an essential cold dish for high-end banquets.
