Fried Shrimp with Eel Back
The method for making Fried Shrimp with Eel Back involves slicing the eel back meat into strips, coating them in a batter made of salt, yellow wine, cornstarch, flour, and water. A sauce is prepared by mixing minced garlic, yellow wine, soy sauce, sugar, vinegar, and cornstarch. Each eel strip is then deep-fried in oil heated to 70% of its maximum temperature until a crust forms, after which they are removed. When the oil temperature is raised to 80%, the strips are fried again until golden brown, then taken out and placed on a serving plate. The remaining oil in the pan is poured over the eel strips, and cooked shrimp slices are added on top. The shrimp are snow-white and tender, while the eel back is golden and crispy.
