Following the invitation of MOF pastry chef Franck Michel in June, Grand Hyatt Taipei has once again welcomed renowned patissier Christophe Renou—who was awarded the title of MOF Best Pastry Chef in 2015— for an exclusive residency from October 18 to 20. In collaboration with Grand Hyatt Taipei’s Executive Pastry Chef Bo An, Renou has curated a selection of new dessert offerings available from October 18 to November 19 at the Afternoon Tea service in the second-floor Tea Lounge. Additionally, a limited-time, hotel-exclusive “Pineapple Meets Yuzu” cake roll is being sold at the first-floor Baguette Gourmet & Bakery.

The “Pineapple Meets Yuzu” cake roll, exclusively available at Baguette Gourmet & Bakery, is made without any molds. In addition to using locally grown Taiwanese perfume pineapples, Renou chose yuzu jam as another star ingredient, believing that the fragrance of yuzu not only highlights the flavor of pineapple but also adds a refreshing taste. Priced at NT$1,200 for a whole roll or NT$185 per slice.

The afternoon tea offerings at the second-floor Tea Lounge include Literati Pineapple, Citrus Caramel Roll, Caramel Gentleman, and a savory selection. In addition to the delicious desserts designed by Chef Renou, savory items play a significant role in achieving flavor balance within the three-tier afternoon tea set. Smoked salmon marinated in yogurt with honey mustard sauce offers a diverse taste experience. There is also a delicate bite where small shrimp are slit open and filled with caviar, garnished with sprouts, delivering a crisp and bouncy texture. As for the black mesh made from bamboo charcoal powder and olive powder, it is layered with halved fresh grapes, red wine jelly, duck liver, and crispy crackers. The culinary team has even included the rarely seen Salmon Wellington in the afternoon tea set.
