Unlike the moist texture of Taiwanese stir-fried noodles, Japanese yakisoba features a unique rich sauce and springier noodles—it's always been one of my favorite Japanese dishes. While it’s not hard to make, there are a few things to watch out for. Get these details right, and you can cook super tasty yakisoba at home too. So, let’s get right into how to make it!!
Ingredients (Serves 1)
200g yakisoba noodles (oil-based noodles)
50ml Japanese yakisoba sauce
About 1 bowl of cabbage
¼ of an onion
60g pork belly slices
Carrot (cut into chunks), as desired
1 egg
Nori (seaweed) flakes, as desired
Pickled ginger, as desired
Japanese mayonnaise, as desired
Directions:
1. First, stir-fry the yakisoba noodles in a dry pan.Stir-fry until the noodles are slightly golden brown and you can smell their aroma.Then set them aside.

2. Add the pork belly slices to the pan and stir-fry until they render their fat.

3. Next, add the onion and carrot and stir-fry until fragrant. (To retain the onion’s texture, just stir-fry until aromatic is fine.)4. Add the cabbage and stir-fry. Once the cabbage is about 70% cooked, add the noodles and stir briefly, then pour in the yakisoba sauce and stir until the sauce is fully absorbed by the noodles. Plate up.)

5. In a separate pan, fry a sunny-side-up egg.

6. Finally, sprinkle nori flakes on top of the yakisoba, add pickled ginger and the sunny-side-up egg, then squeeze on some Japanese mayonnaise to taste, and you're done.

1. Pre-stir-frying the noodles helps them come out more springy.

Tips
2. For better texture, avoid chopping the pork belly or cabbage too finely.
When eating, break the yolk and mix it into the richly sauced, springy noodles—paired with an ice-cold beer, what could be more enjoyable? (laughs)
