New Mapo Gimbap Taiwan Branch 1 Opens on November 14 – Must-Try Dishes Include Mapo Gimbap and Stove-Side Egg

Aside from using locally sourced ingredients from Taiwan, all kitchen equipment and sauces used in the restaurant are directly imported from South Korea. Here, you can not only enjoy authentic Korean-style Mapo Gimbap (pork diaphragm meat) and stove-side egg, but also taste grilled pork skin as featured in Korean dramas.

The first Taiwan branch of the Korean BBQ chain brand New Mapo Gimbap has finally officially opened on November 14. Aside from using locally sourced ingredients from Taiwan, all kitchen equipment and sauces used in the restaurant are directly imported from South Korea. Here, you can not only enjoy authentic Korean-style Mapo Gimbap (pork diaphragm meat) and stove-side egg, but also taste grilled pork skin as featured in Korean dramas. To celebrate the opening, from November 14 to 16, customers spending NT$880 per person can enter a raffle to win a round-trip Korean air ticket (one ticket).

New Mapo Gimbap Taiwan Branch 1 is the global 501st outlet. To ensure consistency and maintain the same style, the parent company DIDIM FOOD imported the tables, chairs, BBQ grills, and even the exhaust fans used in the Taiwan No. 1 store from South Korea. Additionally, the dipping sauces for grilling, the seasonings for pickling kimchi, and all the marinades for the meat are also imported from Korea.

As for the pork and beef used, Qiu Qianfang, manager of New Mapo Gimbap Taiwan Branch 1, said that the parent company has very high standards for meat quality. During the preparation period, they specially sent people to Taiwan to find suppliers. For example, for Mapo Gimbap (pork diaphragm meat), since there are only two pieces per pig and many Taiwanese street vendors have high demand, they had to source from multiple suppliers. Qiu Qianfang also mentioned that the pork used by New Mapo Gimbap is fresh-killed, while the beef is U.S. Choice grade.

Grilled pork skin, as featured in Korean dramas, is also a signature dish at New Mapo Gimbap. Qiu Qianfang explained that after obtaining the pork skin from the supplier, they not only remove all the hair but also clean off the subcutaneous fat layer, leaving only the collagen-rich skin. Qiu Qianfang added that since Taiwanese pork is stamped with a red mark after quality inspection, any pork skin with such a mark cannot be used.

At New Mapo Gimbap Taiwan Branch 1, pork offerings include Mapo Gimbap (NT$369), Spicy Mapo Gimbap (NT$399), Mapo-style Pork Chop (NT$349), Mapo-style Braised Pork Chop (NT$349), Mapo-style Pork Belly (NT$349), Braised Pork Skin (NT$249), Mapo-style Matsusaka Pork (NT$349), and Pork Intestine (NT$299). Beef offerings include Premium Wagyu (NT$799), Mapo-style Braised Beef Ribs (NT$749), Snowflake Sirloin (NT$699), Thin-sliced Beef Brisket (NT$399), Secret Recipe Steak (NT$599), Korean-style Pear-marinated Raw Beef (NT$599), Beef Ribs (NT$549), and Stewed Beef Ribs (NT$599).

For combo platters, the pork platter (NT$1299) includes Mapo Gimbap, pork belly, Matsusaka pork, and braised pork chop; the beef platter (NT$2099) includes beef ribs, thin-sliced brisket, premium wagyu, and snowflake sirloin; the mixed platter (NT$1699) includes Mapo Gimbap, pork belly, snowflake sirloin, and beef ribs.

Whether it's pork or beef, Qiu Qianfang recommends trying the original flavor first, then moving on to the marinated braised versions. When grilling the braised meats, the original grill plate is switched to a wire mesh one, because marinated meat tends to stick to the regular plate, necessitating the use of a mesh grill.

While most BBQ restaurants—whether Korean or Japanese—use either direct charcoal flames or gas stoves, New Mapo Gimbap combines both charcoal and gas. Qiu Qianfang said this allows for the aroma of charcoal-grilled meat along with the convenience of a gas stove.

Regarding reservations, for the first three days after opening, walk-ins only are accepted—no reservations. Starting November 17, 10 tables are available for reservation daily, with 16 tables for walk-ins. As of now, all 7:30 PM time slots on weekdays before December 31 are fully booked, while weekends are fully booked all day.
