▲The texture of handmade rice cake paired with Korean kimchi offers a tangy and spicy flavor, delivering a warm and comforting bite every time.

1. Stir-fried Korean Rice Cake

Ingredients:
Glutinous rice flour 90g
Rice flour 60g
50°C warm water 125g
Salad oil 10g
(Filling)
Korean kimchi 50g
Green onion 20g
Onion 20g

Method:
1. Mix glutinous rice flour and rice flour with warm water to form a dough, then add salad oil and mix well.
2. Divide into six equal portions, roll each into an 8cm-long strip, and brush a little oil on the surface.
3. Steam in a steamer over medium heat for 22 minutes until cooked, then remove.
4. Once cooled, slice diagonally and stir-fry with green onion, onion slices, and kimchi until well combined.

Zero-fail tip:
* Korean rice cakes are long strips, while Ningbo rice cakes are sliced strips — they look different but use the same ingredients.
* Besides Korean kimchi, you can also stir-fry with pork and cabbage for a Taiwanese-style flavor.

▲According to Traditional Chinese Medicine, black sugar is warm in nature and sweet in flavor, entering the spleen meridian. It helps tonify the middle, boost qi, soothe the middle jiao, strengthen the spleen, and warm the stomach.

2. Black Sugar Beef Broth

Ingredients:
(Dough)
Glutinous rice flour 120g
Cold water 75g
(Sugar syrup)
Black sugar 50g
Ginger slices 20g
Water 150g
(Toppings)
Peeled hard peanuts 30g

Method:
1. Mix glutinous rice flour with 75g cold water by hand until slightly doughy.
2. Take about 1/3 of the small dough and boil in hot water until solid.
3. Return the cooked pieces to the original dough and mix well.
4. Boil black sugar with water, then add ginger slices and simmer over low heat for 5 minutes.
5. Roast peeled hard peanuts at 160°C until fragrant, then roughly chop.
6. Divide the dough into 25g balls and slightly press the center of each.
7. Boil the dough balls in another pot of boiling water, then remove once they float.
8. Pour in the prepared black sugar syrup and sprinkle with chopped peanuts.

Zero-fail tip:
* Pressing the center of the dough ball deeper helps it cook more evenly.
* Besides serving hot, it also tastes great with ice.
