The 2016 Michelin Guide to Tokyo was released on December 1, listing a total of 217 Michelin-starred restaurants in the city. Although this number is down from 267 the previous year, Tokyo still remains the capital with the most Michelin-starred restaurants in the world. The newly released guide includes 13 three-star restaurants, 51 two-star restaurants, and 153 one-star restaurants. Most notably, “Tsuta,” a ramen shop that was listed among the 22 recommended ramen shops in the 2015 edition, has become the first ramen restaurant to earn a Michelin one-star rating.
Ramen is one of Japan’s representative cuisines. In the 2015 Michelin Guide to Tokyo, 22 Tokyo ramen shops were recommended, one of which was Tsuta, located in Tokyo’s Toshima Ward. In the 2016 Michelin Guide to Tokyo, Tsuta moved up a notch to receive a Michelin one-star rating — the first time a ramen shop has earned a star in the Tokyo Michelin Guide.
The 13 three-star restaurants are Quintessence, Joël Robuchon, Saito, Sukiyabashi Jiro, Ishikawa, Yamadaya, Ishikawa, 8Ôiso, Kanda, Torari, Makimura, Kōyama, and Ryugin. Among them, Torari was upgraded from two stars to three.
