This café has always been in my top three in Sydney. I love the high ceilings, the spacious and comfortable environment, and the excellent-quality coffee. This time, I noticed that to ensure quick service, they pre-grind measured portions of coffee beans into small steel cups as shown in the photo. I was curious and asked them about it. In my coffee education, I learned that to preserve the flavor, beans should be ground just before brewing. When I asked the barista about this, they explained that they had conducted some experiments and found that by grinding the beans in advance and using them within 20 minutes, the flavor difference remains minimal, which helps maintain consistency and allows for faster service.
Do cafés in Australia really have to close so early? There are barely any left open after 3 or 4 PM...

How can you visit Sydney without stopping by The Reformatory Caffeine LAB?! Let me repost my previous introduction. Whether it’s the overall space design, the choice of coffee beans, brewing equipment, technique, or even the presentation when serving your drink—you’ll understand why this place ranks No. 1 on Beanhunter.
Space Design: It’s a long, seat-less space similar to Taipei’s east district COFFEE : STAND UP—mainly for takeout. Its wild and bold American-style graffiti gives off a strong visual impact and defines the café’s unique character.
Customer Service: The staff are very enthusiastic, friendly, and patient when answering customer questions. The baristas have extensive coffee knowledge. Coffee Beans: The shop offers many bean options and you can also try beans from Ninety Plus Coffee. I ordered an Ethiopian Geisha from the Finca Emerald Estate for AUD $10. The barista used a V60 for pour-over with a single pour. The classic citrus aroma greets you, and the taste is rich and smooth with a tea-like body, layered with evolving plum and berry acidity. The aftertaste is pleasant with a hint of honey sweetness.

I didn’t expect to find coffee beans roasted in Taiwan here in Sydney.
Their espresso blend comes from the well-known Australian roastery Single Origin Roasters, while the single-origin beans are from Taiwan’s Hulao Da’s Tiaoxuan Coffee Roasters. Interestingly, the first time I ordered an espresso, it came with raisins, whereas some cafés serve it with a small cup of their own flavored tea. The coffee was delicious, but the sign said Costa Rica Geisha, yet what I got was Panama Ninety Plus Lycello Geisha @@...
