Paired with Sanfan’s best-selling hot pot—boneless short rib kelp hot pot—the set is priced at NT$4,800 per person.

Ranked alongside snow crab and red king crab as one of Japan’s top three crabs, the matsutake crab is known for its premium status. It can only live in pristine, unpolluted waters and cannot be bred artificially. A matsutake crab that makes it to the dining table typically requires ten years of natural growth. Due to Japanese government conservation regulations, its annual catch is quite limited, making it the most expensive of the three renowned crabs.
