Centuries-old COVA Taiwan branch opens – enjoy delicious desserts for just NT$70

Here, you can savor the most authentic Italian-style coffee, cakes, and chocolates. Small pastries (cream puffs) are NT$70 each, while daily featured cakes are NT$220 per slice. As for COVA’s signature chocolate products, the “Goodnight Sonata” chocolate is NT$35 per piece, the “Gold Bar” chocolate is NT$70 each, and filled chocolates/truffle chocolates are NT$80 each, regardless of flavor.

To ensure that all products in the Taiwan branch maintain the same quality as the flagship store in Milan, staff were sent to Milan for training. Prior to the opening, the head chef of the Milan store, Edoardo Gadda, even flew to Taiwan personally, ensuring that every dessert enjoyed by Taiwanese customers is just like those in Milan. As for the chocolates, they are all handcrafted in Italy before being shipped to Taiwan. COVA CEO Paola Faccioli emphasized that due to the handmade nature, the size of all chocolates may not be exactly uniform.


▲ The Gianduja Gold Bar chocolate is one of COVA’s signature items. Meticulously wrapped in gold foil, this refined chocolate is crafted from Gianduja — a rich hazelnut chocolate containing 30% hazelnuts — sourced from the fertile Piedmont region in northwestern Italy. Its smooth, velvety, and intensely flavorful taste melts in your mouth, releasing a delicate and lingering nutty aroma.

Due to various environmental and logistical constraints, not all raw materials for the Taiwan branch can be imported from Italy. However, Edoardo Gadda stated that many ingredients can be sourced locally in Taiwan with quality comparable to that in Italy. Taking the croissant as an example, he assured that croissants made with Taiwanese flour and water taste just as good as those made in Italy. He guarantees that the flavors of desserts in Taiwan’s COVA will be just as delightful as those in Milan. 

With Taiwan’s environment being more humid and hot than Italy’s, could that affect dessert preparation? Edoardo Gadda explained that all desserts in COVA Taiwan are made daily, adjusted according to the day’s humidity and temperature, then taste-tested and fine-tuned to ensure the best quality. And it’s not just desserts—coffee also tastes different when brewed indoors versus outdoors.


▲ Unwrapped filled chocolates are NT$80 each, regardless of flavor; those with wrapping are NT$70. A variety of praline chocolates, made following COVA’s traditional handmade method and mixed with baked nuts and nougat, gradually delight the taste buds with their rich, intense aroma.
