Black truffles, ranked alongside caviar and foie gras as one of the world's top three gourmet ingredients, are about to enter their peak season. Their mysterious yet enticing aroma attracts food enthusiasts. HowToTrip Grand Hotel’s 45th-floor Lobster Wine Hall has specially sourced black truffles from France’s Perigord region, known as the "black diamonds" of the dining table. From now until March 31, they are offering a "Premium Black Truffle Set Menu" priced at NT$3,480 + 10%.
The Lobster Wine Hall’s special black truffle set includes sweet shrimp tartare with Perigord truffle, Perigord truffle wild mushroom soup, hot spring egg with Perigord truffle and creamy white sauce on rice noodles, Boston lobster with Perigord truffle and white wine sauce, grilled U.S. Wagyu ribeye with Perigord truffle sauce (main course), crab mousse garden salad, dessert, and coffee. The appetizer "sweet shrimp tartare with Perigord truffle" features avocado as a base topped with fresh raw sweet shrimp, seasoned only with olive oil, sea salt, and black pepper. The second hot appetizer, "hot spring egg with Perigord truffle and creamy white sauce on rice noodles," is made with a classic Italian risotto cooked with broth, cream, wine, and onions, topped with slices of black truffle.

The cold appetizer "Boston lobster with Perigord truffle and white wine sauce" is prepared by pan-frying a whole, fresh Boston lobster, enhanced only with a light white wine sauce. The main course, "grilled U.S. Wagyu ribeye with Perigord truffle sauce," uses premium American Black Wagyu ribeye steak, known for its tender texture and slight chewiness from the marbling.
Ms. Chien Chi-wen, the chef and floor manager of HowToTrip Grand Hotel’s 45th floor, explained that since heat can cause the unique aroma of truffles to dissipate, every dish in this set menu—from appetizers and soups to both appetizers and the main course—features freshly shaved black truffles added tableside. Guests can enjoy the fragrance of the truffles while watching the chef’s expert truffle-shaving technique.
