Today, I’m sharing with you one of the most common Thai dishes we enjoy – Thai Red Curry Chicken. Spice lovers, don’t miss out on this one. And if you’re not into spicy food, don’t worry – simply adjust the amount of red curry paste to still enjoy a delicious and authentic red curry. Let’s get started~

Ingredients:

1 kg chicken thigh meat
100g Thai red curry paste
2 potatoes
3 shallots
350ml coconut milk
5 kaffir lime leaves
a small amount of Thai basil
1 tbsp palm sugar
2 tbsp fish sauce
500ml water

Method:

1. First, sauté the shallots until fragrant, then add the red curry paste and stir-fry until aromatic.

2. Next, pour in 200ml of coconut milk and stir until fragrant.

3. Add the chicken and stir-fry together.

4. Then add water, potatoes, kaffir lime leaves, and the remaining 150ml of coconut milk. Bring to a boil over medium-high heat, then reduce to low heat and simmer until the potatoes are fully cooked.

5. Finally, before turning off the heat, add Thai basil, fish sauce, and sugar to season. Your dish is ready.



Tips

1. Frying the curry paste in oil first will help bring out more aroma.
2. For those who prefer a stronger flavor, you can add galangal and lemongrass in Step 1 and stir-fry together.
3. The flavoring of each brand of red curry paste varies, so feel free to adjust the amount of fish sauce and sugar according to your taste at the end.
