To celebrate the opening of its sister hotel, the Four Points by Sheraton Penghu, The Bistro on the Park at Sheraton Pwahsien Grand Hotel will kick off the Penghu Food Festival from March 29 to April 29. The buffet features daily fresh seafood delivered directly from the source. The cold dishes section includes sweet Penghu oysters, snowflake-style Japanese salad, and Japanese-style pufferfish skin. The hot dishes section offers specialties such as sea urchin custard scramble, garlic-leek pork tenderloin, cactus snow-fried rice, and stone frog garlic-leek braised pork ribs. Each guest will also receive a complimentary bowl of chef’s special squid vermicelli or fresh oyster noodles. Desserts include the local favorite black sugar cake and a special cactus ice cream.
The cold dishes section is led by shell-on oysters, with the freshly sliced sashimi area featuring a variety of signature Penghu seafood. Chef Jian noted that a slightly acidic sauce best brings out the sweetness of the oysters, and his specially made tomato salsa or freshly sliced lemon make great pairings. Other highlights include firm and sweet red snapper sashimi, Q-textured and chewy hairtail sashimi, collagen-rich pufferfish skin served with a special spicy and sour sauce for a refreshing start. There are also cup salads available, where the star ingredient is “snowflake,” which has become the fourth major economic crop of Penghu after cactus, aloe, and windgrass. Snowflake has a naturally salty flavor and is seasoned with citrus vinegar and Japanese-style dressing to balance the saltiness.
