For dessert, the matcha red bean pancake is the most popular. It uses Danan large honey red beans and Uji matcha ice cream. The shop says the pancake takes effort to make—flour, eggs, honey, unsalted butter, and plenty of milk are mixed into a batter without baking powder, then refrigerated and fermented for 8 hours before baking. The result is chewy yet healthy.

Even as restaurants increasingly compete on visuals and strong aromas, Lilia Cafe stays true to the natural flavors of food, avoiding additives and steering clear of processed dishes that taste good at first but leave you parched later.
