‘／Bloom Trio／ Every time I have something I want to do, it feels like a flower blooming in my mind, not knowing what it will grow into.’ Before the opening of Bloom Trio, on March 2nd, this was posted on Facebook, marking the very beginning of Bloom Trio. (Note: 'Bloom' in English means 'to flourish' or 'to bloom')

Bloom Trio is located in a traditional-style old house. Just past the counter, there are several cultural and creative shops to explore. Inside the entrance, there's a large standing wooden table by the corner, and the small courtyard also offers a few benches where you can sit and enjoy your food.

Pink Bliss $130

Plain, Frozen Berries, Raspberry Puree, Buttercream

The shaved ice at Bloom Trio has a smoother, denser texture than the typical Taiwanese-style crushed ice found at night markets. The portion isn't large—about the size you could grab with five fingers. It’s topped with sweet and tangy fresh frozen berries and raspberry puree, while the buttercream has a texture similar to cool yogurt. The combination of sweet, sour, and refreshing shaved ice isn’t overly sugary and is truly refreshing and cooling.

Postscript

Aside from ice treats, Bloom Trio also offers coffee and pour-over tea. Its cute transparent cups feature simple black lettering that spells out “Bloom Trio,” resembling a small white hill covered in red and deep-hued fruits and greens. On a hot day, sitting in the non-air-conditioned old house courtyard feels like stepping back in time, enjoying ice treats with a breeze and sunlight.
