Indonesia is the world’s largest producer of bird’s nest, accounting for 80% of global production. In the past, visitors to Indonesia had only limited or hearsay knowledge about this top local specialty, often relying on information from souvenir shop staff. These scarce sources shrouded bird’s nest in an air of mystery and rarity. Now, tourists visiting the picturesque island of Bali can explore newly opened bird’s nest tourist factories, becoming the latest must-see attraction for travelers.

Upon arrival at the bird’s nest factory in Nusa Dua, visitors are first given a wireless headset to connect with the guide, ensuring clear audio as they move around the facility. The tour begins with a model swiftlet house, where various bird’s nest samples are displayed. The guide explains how traditional wild harvesting not only damages the ecosystem but also affects yield and quality. They then introduce scientific swiftlet farming methods, demonstrating how factors like temperature, humidity, light, sound, scent, and location are controlled to attract swiftlets to build nests in eco-friendly, man-made houses. Modern farming and harvesting techniques significantly improve the quality of bird’s nest compared to wild cave nests. Guides may also play recordings of swiftlet mating calls in the model house for visitors.

Next, visitors observe the cleaning and processing stage—the most crucial step in ensuring bird’s nest quality—particularly how to prevent the addition of bleaching agents or preservatives. This is known as “washing and feather removal.” Visitors can see female workers dressed in white dustproof suits and masks, diligently cleaning bird’s nest behind large glass panels. The guide explains how unethical practices, such as adding bleach, preservatives, or glues to increase weight, occur at this stage, as well as national standards requiring zero chemical residue in inspected bird’s nest.

The tour then continues to a fully isolated, dust-free, low-temperature automated production line. Through a 26-meter-long glass wall, visitors can watch a row of machinery in action. First, measured portions of bird’s nest are placed in test tubes. Once the machines complete bottle washing and drying, workers on the production line fill the bottles. The filled bird’s nest is then injected with rock sugar syrup via an automated high-pressure pump, after which air is extracted to seal the bottles in a vacuum. A computerized vacuum inspection machine checks for proper sealing, followed by high-pressure sterilization in an autoclave for high-temperature sterile processing. After natural cooling, the manufacturing date is printed, and automatic labeling completes the packaging.

Many assume canned foods can be stored for years due to preservatives, but it’s actually the sterilization equipment that makes it possible. The factory’s concentrated ready-to-eat bird’s nest, produced using vacuum high-temperature high-pressure sterilization technology, is claimed to be an exclusive Indonesian technique. Unopened, it can be stored at room temperature for two years. Finally, visitors can choose to sample rock sugar bird’s nest in the VIP lounge at their own expense. The exit features a souvenir shop offering local products.
