The highly anticipated Japanese ramen chain Ichiran, long awaited by foodies in Taiwan, has confirmed its expansion to Taipei’s Xinyi District. The new location will be on the bustling Songren Road in Xinyi, with a grand opening scheduled for June.

Ichiran specializes in customizing ramen flavors to suit individual tastes, including richness, toppings, broth seasoning, and noodle firmness — all at no extra charge. This approach makes it easier for first-timers to enjoy Japan’s traditionally rich and intense ramen. The broth itself is made from pork bones simmered for days and blended with over 30 ingredients, including chili peppers, resulting in a signature secret recipe. Its slightly spicy red broth is its most distinctive feature.
