After opening Chou Chou French Cuisine, which serves classic French flavors, in 2016, Lin Ming-Chien launched LONGTAIL Restaurant & Bar in Taipei’s Dunhua commercial district in 2017, staying open until 2 a.m. In addition to offering top-tier contemporary fusion cuisine, the venue also serves creative cocktails, fine wines, and craft beers, providing night owls with a new dining choice.

LONGTAIL offers à la carte dining, simply categorized into appetizers, main courses, desserts, and hot dishes. The restaurant specializes in contemporary fusion cuisine. For example, the famed Hong Kong dim sum dish, char siu bao, is reimagined here with honey-glazed pork belly paired with Korean kimchi, presented like a Western burger. Another signature, braised oysters, takes a staple from local Taiwanese stir-fry shops and gives it a Western twist, allowing diners to enjoy distinctive dishes unlike any they’ve had before.
