The Michelin Guide’s “Food Oscars” Revealed: Three Taiwanese Restaurants Make the List

After the release of the Taipei Michelin Guide — often seen as the food industry’s bible — the Asia’s 50 Best Restaurants, known as the “Oscars of the culinary world,” were unveiled in Macau. Taiwan had three restaurants on the list: RAW came in at No. 15, MUME at No. 18, and Sushi Ginza Onodera (listed as 祥云龙吟 here) at No. 47. The top spot went to Bangkok’s Gaggan, famed for its Indian molecular cuisine, while the second and third places went to restaurants located in...Tokyo’s popular DEN and FLORILÈGE.

The three Taiwanese restaurants on the list each have distinct styles: RAW emphasizes expressing local Taiwanese flavors through French culinary techniques, MUME showcases Nordic cuisine using over 90% Taiwanese ingredients, and Sushi Ginza Onodera (祥云龙吟) focuses on Japanese cuisine. Among them, both RAW and MUME have just been awarded one Michelin star, while Sushi Ginza Onodera has earned two. Additionally, another association, The Diners Club, will present the 2018 Lifetime Achievement Award to renowned Taiwanese chef André Chiang.

Sushi Ginza Onodera has been nominated for Asia’s 50 Best Restaurants for the first time and has also just received two Michelin stars. It carries on the culinary style of Tokyo’s Roppongi Ryugin while creating Japanese cuisine that doesn’t exist in Japan but is unique to Taiwan, using 100% locally sourced Taiwanese ingredients to craft an original Japanese dining experience in Taiwan.

Although RAW Chef André Chiang has announced his withdrawal from star rankings and closed his Singapore restaurant Restaurant ANDRé, his influence remains strong. Meanwhile, MUME, also a one-Michelin-star restaurant, made its first appearance on the list in 2017 and is expected to climb higher this year — making it one of the most talked-about restaurants in recent years.
