As spring warms the air and we think of cherry blossoms in full bloom and an abundance of sweet-tart strawberries, matcha has also become one of the must-try flavors of the season. Many brands have introduced a range of matcha-inspired treats to mark the arrival of spring, including ice cream, cakes, and beverages that are sure to excite any matcha lover. Here’s a round-up of seven recently launched matcha masterpieces you won’t want to miss.

1.Cold Stone

Popular ice cream chain Cold Stone introduces new flavors every season, and this spring they’re rolling out the “Ultra Rich Matcha Series.” Featuring double-strength, ultra-concentrated matcha flavors in ice cream, drinks, and pancakes, the collection includes brand-new offerings such as “Fresh GOOD Matcha Lemon,” “Rich Uji Berry Good,” “Rising Sun Pancake Ice Cream,” “Rich Matcha Snow Melt Milk Tea,” and “Queen’s Arrival.” The “Fresh GOOD Matcha Lemon” combines Uji matcha ice cream with lemon milk ice cream for a surprisingly delightful taste. The “Rich Uji Berry Good” blends Uji matcha ice cream with tangy strawberries and chewy mini mochi for a refreshing burst of flavor. The “Rising Sun Pancake Ice Cream” creates a Mount Fuji-shaped matcha pancake—available only at 15 limited-edition locations nationwide—and is the perfect summer treat for matcha ice cream fans.

2. Li Tea x PX Mart

The allure of matcha has swept across Taiwan. Li Tea, a century-old matcha brand from Uji, Kyoto, Japan, known for innovation, has teamed up with PX Mart—which frequently makes headlines for its collab desserts—to launch 11 new matcha treats. The entire series uses Li Tea’s signature matcha powder, made using traditional methods that finely grind tencha leaves into high-quality, aromatic powder. Unlike regular green tea, these matcha-infused desserts offer refined, elegant flavors and unique textures. The lineup officially launched on April 13.

3. Starbucks

Beloved coffeehouse brand Starbucks has launched two matcha-flavored cakes for Mother’s Day this year: the “Matcha Chiffon Cake” and the “Matcha Cheesecake.” The “Matcha Chiffon Cake” uses premium Kyoto matcha powder, blending matcha’s distinctive flavor into a moist and bouncy chiffon cake. It's topped with rich matcha and classic whipped cream, along with decorative No. 9 red beans that are simply irresistible.
