The “Haruki Layered Tonkatsu,” voted one of Tokyo’s top 20 popular rice bowls on Japan’s famous TV show “Golden Legend,” has officially launched in Taiwan. The restaurant uses exclusive techniques to stack ultra-thin slices of pork into a compact, juicy layered tonkatsu, which has been widely imitated by competitors in Japan—earning Haruki the title of “Originator of Layered Tonkatsu”!

The pork used in Japan’s super-popular Haruki Layered Tonkatsu comes from the “San Yuan Pig,” also known as the “fantasy pork.” These pigs have high activity levels, resulting in firm, high-quality meat. The cut used is the large loin, which is thinly sliced and stacked layer by layer, coated with raw breadcrumbs, and then deep-fried at a low temperature to create a crispy outside and tender, juicy inside.
Delicious tonkatsu pairs perfectly with white rice, so Haruki’s layered tonkatsu is served with premium Japanese Koshihikari rice. Combined with Haruki’s patented rice-cooking technology, the rice is cooked fresh upon ordering, resulting in a bowl of separate, Q-textured, springy white rice. The Taiwan branch has also specially imported equipment from Japan to deliver the most authentic Japanese flavors to Taiwanese food lovers.
In addition, Haruki Layered Tonkatsu, making its first Taiwan branch debut, has also launched a Taiwan-exclusive flavor: “Taiwanese Basil Layered Tonkatsu,” which creatively blends the commonly used Taiwanese ingredient “Thai basil” with the layered tonkatsu—definitely something to look forward to.
Haruki Layered Tonkatsu is an extremely popular tonkatsu shop in Tokyo’s Ebisu area. Its first Taiwan branch has opened at the Big City Far Eastern Mega Mall in Hsinchu, with future plans to expand to Taipei’s Xinyi District—allowing Taiwanese foodies to enjoy this popular Japanese delicacy without flying to Japan.
