According to *Compendium of Materia Medica*, asparagus can “dissipate nodules and heat, and promote urination,” so let’s use these delicious asparagus shrimp balls to cool down the body this hot summer.
* General dietary therapy also believes it has effects such as moistening the lungs, soothing coughs, and expelling phlegm, among others.
Ingredients:
1 bunch of asparagus
12 shelled shrimp (with shells on)
a few slices of ginger
3 cloves of garlic
a little salt
a suitable amount of starch water
a little chili (optional)
100ml of boiling water
Marinade:
a little salt
1 tablespoon of rice wine
a little pepper
1 tablespoon of egg white (optional)
Directions:
1. First, peel the shrimp, remove the intestinal vein, then mix evenly with the marinade and set aside.

2. Heat oil in a pan, first sauté the ginger slices to release their aroma, then add the shrimp shells and stir-fry until fragrant. Next, add water and simmer to make shrimp stock, then strain and set aside.

3. In another pan, stir-fry the shrimp until 50% cooked, then remove and set aside.

4. In the same pan, sauté the ginger slices and garlic until fragrant, then add the asparagus, shrimp, and a little shrimp stock and stir-fry together.

5. Before serving, add chili (optional), starch water, and a little salt to season and it’s done.

Tips
1. If you prefer a drier texture, you can skip the step of making the shrimp stock.
2. Both shrimp and asparagus cook very quickly, so remember not to stir-fry them for too long while cooking.
