Owner Liu Yuqiao is often seen wearing a straw hat and a towel, pedaling his old bicycle loaded with a large wooden barrel, heading to every corner of downtown Tainan to sell. He uses the fan page to announce operating hours and locations. Despite being exhausted, he keeps tirelessly working hard to ensure that his grandmother’s excellent craftsmanship is remembered and not lost to time.

Every day as the sun just rises, Liu Yuqiao is already busy preparing ingredients, repeatedly stirring a large pot of glutinous rice to achieve a chewy, springy texture. After chopping an appropriate amount of pork cartilage, he simmers everything together in a sesame oil broth over low heat, allowing the rice wine to infuse into the rice and meat while locking in the savory-sweet broth to maintain a certain level of moisture—preventing that dry-mouth feeling. Finally, after a complex process of steaming and simmering, the Nuofu rice cake is officially born.

Generally, Nuofu rice cakes are mostly available in the afternoon, but at times they also appear under the night lights, opening for business after dark—depending entirely on the schedule posted on the fan page that day. The key point is, no matter day or night, before each day’s setup, you’ll see a long line of “Nuofu fans,” not just from Tainan but from all over Taiwan, quietly waiting in line just to taste this unforgettable flavor.

Netizens say the rice cake is soft, tender, and smooth, extremely easy on the palate. The blend of wine and sesame oil creates a rich, distinctive flavor. There are generous chunks of pork cartilage, perfectly tender, suitable for diners of all ages. Also, because the rice cake is kept warm in a traditional wooden barrel, you can faintly sense a subtle woody aroma when eating it. And if it cools down, no worries—the Nuofu rice cake becomes even more chewy and springy when cold, offering a whole different flavor experience.

Since there’s only one barrel of Nuofu rice cakes made per day, sales are limited—one person can buy a maximum of two bowls. Usually, they’re all sold out in less than an hour and a half, like a swarm of locusts passing through. Those planning to make a pilgrimage are advised to follow the fan page early for updates and get in line quickly—otherwise, you may just be left watching others enjoy them.
