Ramen shops are everywhere in Taiwan, and how to stand out in the fiercely competitive market has had many owners pouring their efforts into perfecting the broth. However, some shops have recently started offering oversized meat patties instead of traditional chashu pork – and these huge meat pieces have become the stars of the ramen. ETtoday EBC News has rounded up 3 ramen shops where you can enjoy meat bigger than the bowl.

Fufu Ramen Alliance
At this ramen stall in Miaodong, Fengyuan, Taichung, business is so booming that it only operates for two hours a day before closing. Open from 10 PM (or 11 PM), this late-night ramen stand attracts long lines of customers every night. Its signature Ghost Claw Ramen features an average 20 cm-long charcoal-grilled rib patty that’s even larger than the bowl itself. Many people queue up late at night, with some customers saying they can’t tell if they’re eating pork ribs or ramen – the side dish has completely stolen the show from the main attraction.
Besides Ghost Claw Ramen, there are also Zeus Ramen and Thor Ramen, which also feature meat larger than the bowl.When served, your eyes will be drawn to that massive meat patty and the tsukemen-style noodles. Aside from the main Fengyuan branch and the newly opened Kaohsiung branch, the mobile Fufu Ramen Alliance also makes surprise appearances across various cities and counties. Though the Kaohsiung branch has a physical store, it retains the style of the original shop – with a converted van parked right outside the store, where all the noodle-cooking equipment is set up.

Menya Musashi Kamiyama
Menya Musashi’s first two stores in Taiwan are located in the Dong District’s Huxiao branch and the second in the Zhongshan District’s Tiaotong shopping area – Kamiyama. Kamiyama is considered the headquarters for Menya Musashi’s noodle production, with the second floor serving as the experimental kitchen where ramen flavors are developed and fine-tuned. The most iconic ramen here is the one-piece ramen featuring an extra-large slice of chashu pork – even customers with bigger appetites might struggle to finish it in one go.

Dabao G-Skewers BBQ
This Korean-style skewer BBQ spot “Dabao G-Skewers BBQ” is best known for its 120 cm-long skewers featuring pork, chicken, fruits and vegetables, and seafood. The cooking starts with pork, using the rendered fat to grill the chicken and seafood next, with fruits and vegetables such as pineapple, banana, and king oyster mushrooms interspersed in between. But besides the skewers, there’s also the “Bear Paw Ramen” reminiscent of Ghost Claw – quite a visual treat.
