When traveling to Fukuoka, Japan, you must not miss the yatai, which are similar to Taiwan’s night market food stalls. Hachiyobi Tenjin Style Breeze Store, also originating from Fukuoka, offers a special selection of 13 Fukuoka-style yatai dishes prepared by Executive Chef Junichi Tsuchiya. These include dishes like beef intestine hot pot, yakisoba, mentaiko (spicy cod roe), and Hakata gyoza—all aimed at showcasing the most authentic yatai flavors.

Fukuoka’s yatai cuisine is rich and diverse—you can enjoy ramen, skewers, yakisoba, beef intestine hot pot, mentaiko, and Hakata gyoza. Among these, beef intestine hot pot is one of Fukuoka’s culinary highlights and a must-try dish for visitors. The Hachiyobi-style Fukuoka Beef Intestine Hot Pot uses Australian wagyu beef intestines, combined with Achilles tendon. Xiao Weiyi, brand manager of Hachiyobi, explained that although Japanese wagyu cannot be used, Australian wagyu has a milder beef flavor and is more tender, making it potentially very popular with Taiwanese diners.

Another yatai dish you shouldn’t miss is Japanese-style yakisoba. To recreate the authentic taste of Fukuoka’s yatai, Executive Chef Tsuchiya intentionally pan-fries the noodles first to remove excess moisture, then stir-fries them with a sweet, Osaka-style sauce along with cabbage and pork belly slices—aiming to present this humble yet beloved dish in its most genuine form.

In addition to the Fukuoka Beef Intestine Hot Pot and Japanese yakisoba, other yatai dishes available include corn tempura, salt-grilled mackerel shiozuke (overnight dried), agedashi tofu, steamed clams in sake, thick tamagoyaki (Japanese omelet), salt-grilled squid, truffle-flavored mushroom and cheese teppanyaki, wide-style Japanese ramen, and mentaiko and komatsuna fried rice.
