Yoshino Sushi
When Yoshino Sushi was first established during the Edo period, there were quite a few sushi shops in the Kansai region, most of which served box sushi. So, the then-owner, Eizo Yoshinoya, wanted to create a type of sushi that could only be enjoyed at a sushi shop. Eizo’s keys to success were twofold: perfecting the preparation of sushi rice and switching to using premium seafood.
