As a major agricultural county in southern Taiwan, Guantian in Tainan is famed for its water caltrops. Wandering along the rural paths of Guantian Township, the old song “We row our boat and pick the red water caltrops, oh we pick the red water caltrops” often comes to mind. And today’s Guantian, with the development of its agriculture and fisheries, has also made delicious Taiwanese tai snapper one of its representatives.
It was the golden season for harvesting water caltrops. In the small alleys of Guantian Township, the nostalgic tune “We row our boat and pick the red water caltrops, oh we pick the red water caltrops” would often drift into your ears. Nowadays, Guantian not only offers the nostalgic charm of its rural roots but also presents a new facet of rural beauty through its thriving fish farming industry. The once-simple rural landscape has transformed into a vibrant scene where fish ponds stretch as far as the eye can see, and the air is filled with the rich aroma of grilled tai snapper. If you happen to visit during the harvest season, you’ll be greeted by the sight of farmers joyfully gathering their bountiful water caltrop crops. This place, nestled within the tranquil embrace of nature, offers a delightful fusion of tradition and modernity.
Nestled within the Hulupi Natural Ecological Leisure Park, the newly opened “Qiaojiang Wuyin” is widely renowned for its research and farming of Taiwanese tai snapper. The mastermind behind the Qiaojiang Wuyin brand is Li Zongming, a native of Madou and the son of a fish farmer. In addition to developing tai snapper with no earthy taste, he further dedicated himself to mastering the culinary arts and has now earned the title of “Taiwanese Tai Snapper Cuisine Master.”
The creative Taiwanese tai snapper cuisine at Qiaojiang Wuyin not only offers the rustic and authentic flavors of home-style dishes but has also been selected as the cuisine for presidential banquets. The signature dish, “Salt-Baked Taiwanese Tai Snapper,” is an absolute must-try delicacy. Upon first bite, the tender and juicy texture bursts forth, with the skin crisped to perfection and a rich umami flavor that lingers on the palate. Garnished with a hint of salt and expertly grilled, the dish is complemented by a side of hand-pulled noodles prepared by the chef’s family recipe. The combination creates a symphony of flavors that is both comforting and unforgettable.
