The Danieli’s Italian Restaurant at The Westin Taipei - Regent Taipei will host a wine-paired dinner on the evening of March 25, 2011, starting at 6:00 PM. Designed by Italian Executive Sous Chef Dario Congera, the themed menu includes six courses: Caviar Spice Baked Egg, Garlic Linguine with Yogurt and Caviar, Caviar Vodka Sprite with Lemon Biscuit, Pan-Seared U.S. Natural Beef Tenderloin with Truffle Foie Gras and La Fleur Gazin Sauce. These are paired with six vintages of Paul Roger champagne, showcasing the rich umami of Iranian Sevruga caviar.

Chef Dario Congera explained that caviar consists of the eggs of sturgeon, an ancient fish species found only in inland saltwater lakes in regions such as Iran and Russia. When tasting caviar, you can feel the burst of fish oils and waves of briny freshness on your tongue, leaving a savory, umami-rich aftertaste. Iranian caviar, known for its high quality and low contamination, has a silvery-gray-black luster and is packed with rich fish protein. Pairing caviar with champagne is a classic aristocratic tradition. To highlight its natural flavor, caviar should never be cooked at high heat or combined with complex ingredients or seasonings.

Reminder: Excessive alcohol consumption is harmful to health.
