During festive holidays, mullet roe is always a must-have on the dining table. Its rich aroma combined with the sweetness of white radish is simply intoxicating. But how is mullet roe actually made? The “Zhenfang Mullet Roe Learning Factory” in Yancheng District, Kaohsiung, boasts a history and experience spanning 60 years, which has won the love of locals. It is currently the only mullet roe tourism factory in Taiwan, offering guided tours and DIY courses where visitors can make their own mullet roe. In addition to tasting this long-loved delicacy, you can also make your own mullet roe and learn convenient, quick cooking techniques.

The first-generation operators of Zhenfang Mullet Roe Learning Factory started with a small 2-ping shop in Yancheng Market. After the second generation took over, they introduced professional production processes and established standardized models. They broke away from the traditional outdoor sun-drying method and used fully glassed-in indoor artificial climate-controlled rooms to enhance temperature and humidity control, while also isolating it from outdoor dust, flies, and other pollutants. They also built a Mullet Culture Museum in the factory to showcase mullet culture and folk stories, preserving historical context.

The mullet roe learning factory also offers DIY mullet roe making experiences, from cleaning, salting, shaping, to pressing, allowing visitors to fully experience the entire processing procedure. The semi-finished mullet roe produced can either be taken home by visitors or entrusted to the factory for proper storage and delivery via home delivery. After seven days, you can enjoy the freshest mullet roe you made yourself.
Additionally, the factory provides lessons on making mullet roe rice balls and grilled mullet roe, each lasting about 10–15 minutes. The grilled mullet roe lesson teaches visitors how to grill mullet roe using lit 58% proof kaoliang liquor, allowing them to learn a convenient and fast cooking method to easily enjoy delicious mullet roe at home.
