Since 2003, the United Nations Educational, Scientific and Cultural Organization (UNESCO) has started listing items in the “Representative List of the Intangible Cultural Heritage of Humanity.” This list primarily aims to protect the cultures and traditions of various ethnic groups. Among them, Mexican cuisine, French gastronomy, and the Mediterranean diet have earned their place due to their unique cultural values. Below, we’ll introduce the treasures of these three major cuisines.
 

Mexican Cuisine

Mexican cuisine was one of the earliest to apply for inclusion in the “Representative List of the Intangible Cultural Heritage of Humanity.” Though it was not successful in 2005, it finally achieved its goal in 2010. Mexican food makes skillful use of a variety of spices combined with local ingredients. Its long-standing culinary heritage has never been interrupted, showcasing not only national identity but also the diversity and richness of indigenous cultures, immigrant missionary influences, and modern concepts. For these reasons, it was selected.
 

French Cuisine

While enjoying French cuisine is about savoring an intoxicating gastronomic experience and discovering its irreplaceable cultural significance—something uniquely wonderful—the real reason French cuisine is listed as an item of “intangible cultural heritage” is its “table etiquette.” The sequence and formality of dining—from aperitifs to appetizers, main courses, cheeses, desserts, and digestifs—the elegant table setting, and the art of pairing food and wine that emphasizes harmony (“marriage”)... all transform dining into one of the most important social moments in both personal and communal life.
 

Mediterranean Diet

The so-called “Mediterranean diet” emphasizes balanced nutrition and health, using high-quality fresh ingredients produced in the region. The hallmark of this diet is creating healthy meals that are high in fiber, vitamins, and low in fat, by combining fresh ingredients with simple cooking methods. The most celebrated ingredients naturally include olive oil and wine, along with a wealth of vegetables, fruits, grains, legumes, and freshly caught seafood from the Mediterranean. Moreover, the practices of planting, harvesting, fishing, preserving, and preparing food reflect a seamless integration of culinary techniques and tradition from land to table. These practices are also deeply rooted in humanistic values that respect the land and biodiversity. It is not only a way of eating that promotes health, vitality, and longevity but also an important medium for fostering social relationships.
