Nestled not far from Fu’ao Port on Nangan Island, Jiurong Pavilion’s exterior, crafted with stone walls and wooden structures, adds an extra touch of timeless charm to its Matsu-inspired architecture. The owner smiles and says that wooden buildings carry a raw, timeless appeal, standing out from other Min Dong-style restaurants and helping the place shine bright amid the crowd. Once a truck and taxi driver, the owner decided to switch careers and open one of the few stir-fry restaurants in Matsu when the reduced military presence on the island led to a sharp decline in business. When it comes to the types of dishes served, the owner has no fixed rules—any dish that matches customers’ tastes will be developed, without being confined to any particular cuisine. That’s why you’ll find a variety of dishes on the menu, including Taiwanese and Fuzhou specialties.

When talking about the restaurant’s signature dish, the owner immediately brings up “red yeast shrimp,” saying, “Red yeast is a hallmark of Matsu cuisine, but while some make red yeast pork, red yeast chicken, or red yeast fried rice, no one makes red yeast shrimp. Since no one was doing it, I thought I’d give it a try.” After countless attempts, he successfully created this incredibly flavorful red yeast shrimp dish. First, he insists on using juicy prawns or white shrimp with firm meat, which are marinated in red yeast and a secret blend of seasonings for 20 minutes before being deep-fried. Beneath the crispy shell lies tender, sweet shrimp meat, with a subtle wine aroma perfectly complementing the seafood’s natural umami.
