Ichigen Ramen from Hokkaido is set to officially open its first overseas branch in Taipei’s Xinyi District this September. Japanese Ichigen Ramen uses a generous amount of sweet shrimp heads simmered in the broth for a long time, then enhanced with shrimp oil and lard for processing, giving the broth a unique aroma that sets it apart from ordinary ramen. It has quietly gained a strong following both in Japan and abroad. In Japanese stores, choosing ramen is simple—the shop offers only three types of shrimp-flavored broth ramen: sweet shrimp soy sauce, sweet shrimp salt, and sweet shrimp miso. After your selection, staff will adjust the broth’s richness and noodle thickness based on your preference, allowing you to enjoy your ramen just the way you like it.

Currently, there are four branches in Japan, including the Sapporo main store, New Chitose Airport store, Shinjuku store, and Kawanakajima Kawasaki store. The upcoming Taipei store, scheduled to open in September, will be Ichigen Ramen’s fifth branch and its first overseas location.
