It’s late at night — time to sneak a bite. In early February, Taichung’s nights saw a new crowd of foodies lining up on Zhongcheng Street wearing “green hats” to buy green sesame pancakes, munching and sipping in secret while enjoying this late-night exclusive treat for night owls.

The Green-Hat Sesame Pancake on Taichung’s Zhongcheng Street quietly opened in early February. Its signature green-hat pancake gets its color from spinach and is limited to 120 pieces per day. Sales start at 10:30 PM and end by 2:00 AM, offering a crispy delight available only after nightfall.

The shop’s staff wear green hats and also offer them to customers. A group of people wearing green hats stand in front of the small stall waiting for their pancakes, reminiscent of the image of the dumpling seller Wudalang. Passersby must be quite puzzled — why would anyone rush to “wear a green hat”?

From the bread to the filling and sauce, everything is independently developed by the chef. The texture of the pancakes here is more like that of a Cuban sandwich. The signature Green-Hat Sesame Pancake uses homemade spinach bread wrapped with sesame as the outer layer, filled with cheese, sauerkraut, and shredded pork. Once baked, the pancake is delightfully crispy — a late-night exclusive treat for night owls.

Why sell pancakes late at night? The owner jokes that it’s because you can’t find good late-night snacks at midnight. This simple motivation gives foodies a new option for nighttime cravings. The shop offers only two types of pancakes: the Brandy Cheese Pancake with brandy cheese sauce and the signature Green-Hat Sesame Pancake. Thirsty? Try the “Green Hair Soy Milk,” a matcha-flavored soy milk that tastes uniquely different.

The shop has a cute slogan: “There’s a secretly delicious flavor that you can only get by wearing a green hat at midnight.” By deliberately choosing to sell only late at night, they also hope visitors will keep their voices down and enjoy the little secret of sneaking a bite and quietly slipping away.
