Top 10 Famous Ramen Shops from Japan's Ramen Festival Now Open for Business in Their Original Form

The wildly popular "Japan Ramen Festival" was held in Taipei in February, where ten skilled ramen chefs from Tokyo, Hokkaido, Fukuoka, and Kanagawa airlifted their signature broth to Taiwan, recreating the most authentic version of Japan’s beloved national flavors. Additionally, popular ramen shops in Taiwan such as "Ippudo," "Tanaka Shop," "Nikukara Ramen," "Nakiryu," and "Afuri" will also have their chefs travel across the sea to participate.

The Ramen Festival has been held for many years in cities like Tokyo, Hokkaido, and Fukuoka, attracting hundreds of thousands of food lovers to taste it every time. For its first appearance in Taiwan, it has carefully selected must-visit ramen shops for travelers in Japan, including Tokyo's "4???," Hokkaido's "Hakodate Kitchen Ajisai" and "Yamayama Shop," and Fukuoka's "Kurume Ramen" and "Anshin Ramen."

Each region in Japan offers its own distinctive ramen, with secret broth recipes being the key to winning over foodies. The basic types of broth include pork bone (tonkotsu), soy sauce (shoyu), miso, and salt (shio)—all of which will be available at this first-ever Japan Ramen Festival in Taiwan. There will also be chicken white broth and soy sauce fish broth made from boiled dried sardines. Some shops even add beef tongue to their noodles.

The first "Japan Ramen Festival" is organized by United Digital Culture Company, with Ippudo founder Kawahara Narumi serving as the event’s goodwill ambassador. Sales began on February 6.
