Taipei’s Refreshing Clear Broth Beef Noodles & Super Tasty Wheat Pancakes with Sweet Bean Sauce

I’ve actually visited Mu Ji many times but kept putting off writing about it. This time, the clear broth finally gave me the urge to put pen to paper. Who would’ve thought there’d come a day when I’d genuinely fall in love with a bowl of fragrant clear broth?

The wheat pancake here is a must-order. Though it may look like the common beef wraps you see elsewhere, it’s entirely different. Starting with dough rolled into thin sheets, a layer of oil pastry is carefully spread on, then repeatedly folded, rolled into a snail-shell shape, and finally flattened into a round disc. Once cooked on the spot, its texture is unlike ordinary plain noodles or scallion pancakes—tender, fluffy, with layers of gluten, paired with sweet bean sauce and sliced beef, it’s truly delicious.

Before leaving, we happened upon the lunch break—this is the staff meal that the Mu Ji aunties eat.

The clear broth beef noodles are also a classic. The broth carries a subtle garlic fragrance and saltiness, refreshing and pleasant, with an indescribable rich flavor. Before this, I never really liked clear broth. Even when eating it, my mind would drift to my favorite red-braised style—I just couldn’t shake my craving for bold flavors. The only downside is that the meat pieces have slightly coarse texture and can be a bit dry, but as someone who loves meat, I’m glad I could opt for half-tendon half-meat. Paired with this broth that’s impossible to tire of, it warms both body and soul—it’s hands-down my favorite clear broth, no contest.
