According to CNN, a café owner in Nagoya, Mitsuiki Moriyasu, invented the “salad cake” in 2015 — a visually decorative cake based on vegetables. All ingredients are natural vegetables, and coloring comes from natural pigments. Each cake has a different flavor depending on the vegetables used. Mitsuiki Moriyasu says the taste is an unprecedented experience.

The idea for the salad cake actually came from the founder’s family’s needs. Due to family members having food allergies, Mitsuiki Moriyasu had long been searching for wheat and sugar alternatives. She also discovered the positive effects of a low-sugar and gluten-free diet on the body.

Each cake averages just 193 calories. With their strong visual appeal and commitment to health, they’ve attracted many curious visitors. For travelers who’ve indulged in ramen and sashimi, these cakes make a great light choice.
