Padrino Italian Kitchen, located in Kaohsiung, has been open for four years and offers many classic dishes. The restaurant even accepts custom-made meals through a menu-free service to tailor dishes for guests. Here are some of the restaurant’s classic offerings. Mascarpone Tofu
This dish is made by coagulating cheese and soy milk into a liquid, which is then turned into tofu. It has a soft and tender texture, with the aroma of beans and milk. The restaurant adds various toppings to create different flavor layers, such as sweet and sour sun-dried tomatoes, aged vinegar, and finely chopped scallion oil, all of which enhance the taste nicely.

Maki Duck Leg with Black Cherry Vinaigrette
The duck leg is first marinated with maki (a type of pepper) and coarse salt for a day to draw out the blood and preserve the sweetness while infusing the meat with aroma. It is then preserved in duck fat and olive oil through a confit process cooked at 80 degrees Celsius for eight hours. This method allows the oil to penetrate the duck’s tissue structure, preventing it from becoming dry or tough. The aroma of maki also masks any gaminess from the blood, resulting in a dish that is colorful, fragrant, and delicious.

Reggiano Cheese Custard on Ciabatta Bread
Reggiano Cheese is a representative of Italian washed-rind cheeses, and custard is a classic dish in rustic cuisine. Combining the two creates a unique flavor profile. Ciabatta bread is used because it is a traditional Italian bread. Unlike French bread, it is very moist and becomes crispy after baking, yet remains soft without being overly hard.

A labor-intensive homemade mushroom tartare sauce is combined with a rich creamy sauce, seasoned with aromatic truffle oil. After the noodles fully absorb the sauce, the dish is garnished with truffle shavings, dried mushrooms, and cheese before plating. It’s not too soupy, and the noodles and creamy sauce are perfectly matched, creating a well-balanced dish.

Venice Garlic Squid Salmon Ink Risotto
The squid ink sauce, simmered for a long time, may stain your lips black but tastes absolutely amazing. Italian rice is stir-fried with spices and vegetables, then combined with ink extracted from squid ink sacs to create the sauce, which is cooked into the rice. Vegetable stock is added to reduce and thicken the sauce. The squid is seared over high heat, topped with a specially made garlic herb butter, and after roasting to release the juices, salmon roe is added for an even more intense flavor.
