Abalone has always been a symbol of luxury in Chinese culinary culture. Not only is it one of the Eight Treasures of the Sea, but it also ranks first among the “abalone, sea cucumber, shark fin, and fish maw.” Its shape resembles an ingot, so families that are relatively well-off often enjoy eating abalone during festivals to delight their palates and attract good fortune.

As is widely known, this delicacy from the sea is more expensive in its dried form than when fresh. The reason lies in the concentration of flavor achieved through drying and dehydration, as well as the fact that only the center of dried abalone can achieve the prized un-solidified “sugar heart” texture—tender yet chewy upon eating. Fresh abalone lacks this sugar heart, making its taste vastly inferior.

Abalone has its own unique unit of measurement called “head count.” It’s common to hear terms like three-head or five-head abalone, which come from this system. But what exactly does the head count mean in assessing an abalone’s value? Is a higher or lower number better? In fact, one head refers to “how many abalones make up one jin (500g) of dried abalone.” So, a one-head abalone means a single abalone weighs one jin. A five-head abalone, on the other hand, means it takes five abalones to make up one jin. Therefore, the smaller the head count, the larger the individual abalone.

The head count of abalone is closely tied to its price. One-head abalone is extremely rare and is usually kept as a family heirloom. In 2014, a one-head abalone appeared in Guangdong, larger than an adult man’s palm and requiring at least 20 years to cultivate. At that time, a collector offered an astronomical price of 2.5 million RMB (about 11 million TWD). Such abalone has long transcended the realm of food and can be considered a generational collectible.
