This bowl of Taiji Beef Noodles is the boss’s signature creation, featuring both stewed and braised beef flavors in one bowl. But that’s not all—the boss also offers specially crafted curry and spicy sauces for customers to customize their taste experience. The most crucial part of beef noodles is the broth. Take a sip of the “stewed” side on the left, and you’ll taste a sweet flavor with a hint of shredded ginger, delivering a refreshing sensation. Then try the “braised” side—a mildly spicy yet perfectly balanced broth that’s simply divine. Both sides come with their own “three treasures”: beef, beef tripe, and beef tendons. The beef has evenly distributed fat, resulting in a tender yet firm texture. The boss says the even fat distribution is thanks to “knife skills,” while the ideal texture comes from the precise simmering time and heat control.

The boss explained in detail that the idea behind this dish was to encourage customers to explore the diverse flavors of beef noodles. This “Taiji Beef Noodles” bowl serves as an entry point. Having studied beef noodles for years, the boss shared that her wife is the beef noodle enthusiast—the braised flavor was her creation, while the stewed version is the boss’s own masterpiece. Together, they share a common goal: to promote Taiwanese beef noodles on a larger scale. They aim to elevate beef noodles beyond just being “delicious,” and instead integrate them with “Taiwanese cultural creativity” for lasting heritage.
During the interview, a Japanese customer, after finishing the noodles, told the boss, “Oh, it’s good!” Even an American visitor mentioned how much they missed the boss’s beef noodles and had come back to Taiwan specifically to enjoy them again. The boss joyfully said, “That’s what makes me happiest—seeing Taiwanese beef noodles, combined with our culture, being appreciated by people from other countries.” The boss’s heartfelt intention transforms beef noodles into more than just a dish—they carry the mission of preserving and sharing Taiwanese culture.
