Made with a generous base of vegetables and tomatoes, this soup naturally brings out the sweet flavor of the veggies. Combined with the aroma and gelatinous richness of oxtail, it’s a delicious and healthy dish you simply must try.
Ingredients:
1 kg oxtail
3 onions
150 g carrots
2 bay leaves
3 cloves garlic
1 tbsp Worcestershire sauce
A pinch of salt
A pinch of sugar
A little basil
A little Parmesan cheese
Directions:
1. First, blanch the oxtail and rinse it well before setting aside.

2. In a pressure cooker, add a little oil, sauté the onions until fragrant, then add the oxtail and stir-fry.

3. Next, add the spices and seasonings, cover the pot, and simmer for about 45 minutes.

4. Once the oxtail is tender, season with an appropriate amount of salt and sugar.

5. Finally, plate the soup and sprinkle with some basil and cheese to finish.

Tips:
1. Remember to skim off any foam or impurities from the soup before covering the pot—this ensures a better texture in the finished soup.
2. Using a pressure cooker saves a lot of time.
