Seafood lovers definitely won’t forget Canadian lobster this season. This pricey delicacy, especially when served all-you-can-eat, allows guests to eat to their heart’s content — indulging in delicious lobster until they’re “full to the brim.” Most people would find it hard to resist. So what makes the Canadian lobster, known as the “King of Seafood,” so special?

Just crack open the head of a Canadian lobster, and you can feel that there’s something special hidden inside its thick shell. To fully enjoy the lobster meat, you’ll need both hands and even a crab cracker. When you scoop out a piece and take a bite, you’ll notice it’s quite different from Boston lobster. With lower water content, Canadian lobster meat is firm and bouncy. Its sweet flavor goes without saying — after all, it’s flown in fresh. Dip it in the hot butter that comes with the dish, and the buttery aroma wraps around the meat while complementing the ocean’s natural umami.

Such fresh and delicious lobster doesn’t require overly complicated cooking methods. Chef Wang Fu-li from the Cloud Lounge Western Restaurant at The Regent Taipei says: “To preserve the original flavor of Canadian lobster, we simply blanch it in a broth with vegetables and salt over high heat for about eight minutes.” Chef Wang also noted that the market price for such a lobster is at least NT$1,000 each.

Canadian lobster is mainly sourced from the Atlantic Ocean, and its harvesting is carefully calculated to protect the molting period of the lobsters, ensuring stable yield and quality to meet global demand without shortages.
