The sweltering summer heat often kills your appetite, making a refreshing bowl of cold noodles just the thing. In Taipei City, there’s a cold noodle spot that offers a “double-sauce” flavor, which you can customize with homemade Sichuan peppercorn chili sauce or wasabi, instantly adding variety to the classic cold noodle dish.

“Are you full? Is there enough soup?” These are questions diners often hear from owner Tseng Yung-chih as they eat in his shop. Though it’s just a small eatery, Tseng says he wants to interact with his customers — most importantly, he hopes everyone leaves feeling well-fed. Pointing to a wall article titled “Tseng Family Cold Noodles — Tseng Yung-ti,” Tseng explains that’s his older brother. Having grown up in a military dependents’ village, Tseng Yung-ti infused elements of that culture into the cold noodle shop, not only in the dish itself but also in the warm, homey atmosphere of the place.

You may have had a double-sauce pure beef burger, but have you tried “double-sauce cold noodles”? The combination of sesame paste and fried sauce is perfectly balanced — a result of countless ratio tests during the shop’s early days. Eating just the fried sauce gives a heavier taste, while the sesame paste offers a more traditional flavor. The double-sauce cold noodles offer a fresh alternative, with a mildly salty taste underscored by the aroma of sesame. You can also try adding the specially provided wasabi and the Sichuan peppercorn chili sauce made by Tseng’s brother — the combination may surprise you with how well all four elements blend. The handmade noodles are especially Q and springy, offering an excellent texture. Cucumbers and bean sprouts are handpicked fresh every morning at the market, while the fried and sesame pastes are simmered for hours.

Tseng Yung-chih, once an office worker, says that while working outside taught him life experience and lessons, he always knew deep down he wanted to return to take over the family business and continue his brother’s original vision. “The usual — double-sauce, small portion? Why are you off work so early today?” In truth, Tseng has indeed brought that military village warmth into his little shop. Customers often chat with him like old friends, and the shop, though newly opened, sees a constant stream of patrons.
