Tainan, known as Taiwan’s street food paradise, is famous for its savory snacks with a hint of sweetness, a distinctive local trait also shared by many renowned snack shops across Taiwan. This reveals the sweet-loving, foodie nature of the people in Tainan. In Madou, Tainan, there’s a small dessert stall specializing solely in tofu pudding — it sells only one flavor all year round, regardless of season: red bean paste tofu pudding. When asked about the name of the stall, the elderly vendor who has been running it for decades simply waves his hand and says with a carefree smile, “No name.”

The “unnamed tofu pudding” stall, which has been around for about 40 years, holds childhood memories for many in Tainan. A pushcart with two metal buckets on it — one filled with tofu pudding and the other with red bean paste — along with a kettle of sugar syrup simmered by the vendor for a long time, serves just two flavors: hot and cold tofu pudding. That’s the entirety of the menu. Passersby can casually park in front of this unnamed tofu pudding stall, sit on plastic chairs, and order a bowl of thick, sweet traditional tofu pudding — the perfect summer treat to beat the heat.

“We’ve been eating from this shop since we were kids. The sugar syrup and red bean paste are all made by the vendor himself,” said Ms. Zhou, a local Tainan resident who has been enjoying the “unnamed tofu pudding” for over 20 years. The most delicious part of the tofu pudding is the sticky yet not greasy red bean paste. The soft and tender tofu pudding is scooped from the bucket, drizzled with sugar syrup, and topped with a spoonful of long-cooked red bean paste that still retains the full shape of the beans. As it’s served, the stall subtly shakes along with the vendor’s movements — the chilled bowl of tofu pudding trembles slightly on the cart. It’s a unique performance you’ll only see at street-side snacks.
One spoonful of red bean tofu pudding melts in your mouth, first delivering the sweet and non-cloying aroma of red beans. When you bite into the red bean paste, you can feel the silky texture blending with the tofu pudding on your tongue. As it slides down your throat, the smooth and tender sweetness lingers. The ice-cold tofu pudding is a traditional and flavorful local summer delight.
